Strawberries Lime & Mint Marinated

Summertime and strawberries are in abundance.

Everyone loves strawberries and cream, unless you can’t eat dairy. I have some people in my family who don’t eat cream so I make fruit dishes that do not need cream to be delicious. I stumbled across this recipe in a Sainsbury Magazine and everyone thought it was fantastic. The Sainsbury recipe, however, served a rum and coconut cream with it but I think it is so good as is. The cream could overwhelm the fresh flavours of the marinade. This recipe is free, tangy and delightful.

Give it a try. Be one of the people who chance eating strawberries without cream. Be adventurous this summer!

It is also a very acceptable and super easy dessert for guests, with or without cream.

This serves 4.

600g strawberries

Zest & juice of 1 lime, finely grated

1 T mint leaves finely shredded

2 T icing sugar (powdered sugar)

 

Hull and halve or quarter strawbs into nice bite size pieces

Put strawberries in a non metal bowl along with the zest, juice, mint,and icing sugar.

Mix well, but gently and cover and marinade 30 -45 minutes

The strawberries will soften and become slightly syrupy. M-m-m-m-m

The Sainsbury recipe included a pinch of ground white pepper but I omitted that.
