For Beetroot Lovers

While I was in Barbados we had beetroot (beet USA) salad in two very different ways.

 

The first one was roasted beetroot with slices of pear, candied walnuts and a crumbling of goat’s cheese on lettuce or leaves.

Put your own vinaigrette on and enjoy. It is delicious.

 

The second one is much simpler but very interesting.

It consisted of slices of boiled beetroot and slices of peeled oranges or segments if you prefer.

With or without dressing it is a nice change.

 

Sometimes we had sliced beetroot and sliced raw onion. Could be an acquired taste with this one.
