Courgette/Zucchini & Tomato & Garlic Fry.

If you have a glut of courgettes and tomatoes in the garden or just using up the last of your produce this autumn this recipe is for you.

One of the easiest and tastiest ways to eat them is to fry them up in Olive Oil with garlic.

The second photo is courgette with red pepper, also fried with garlic.  Some like to add onion but not me. I’m not even keen on the one with peppers as it begins to taste like Ratatouille.

I prefer the clean taste of garlic, tomato and Olive oil with the courgette soaking up all those flavours.

I always add fresh chopped herbs, Flat Leaf Parsley is my fav. but adding some Basil is delicious too or you can lean towards the Italian with Oregano and Marjoram.

 

INGREDIENTS

Courgettes 2-3 medium

Tomatoes as many or few as you like

Could be 3 very large ones or two large handsful  of cherry tomatoes

Garlic 3 or more large cloves

Fresh Herbs

S & P

Olive Oil

 

METHOD

CHOP the courgettes and tomatoes

SLICE the garlic cloves

FRY the courgettes with tomatoes in a large frying pan for a couple of minutes

SEASON with salt & pepper

ADD the garlic and fry for another couple of minutes. 5 minutes altogether should be enough.

Make sure you don’t fry them too long as they will be too soft, they need a little bite or they will be a sauce for pasta, which is also nice.

SPRINKLE over with roughly chopped fresh herbs (and Parmesan cheese if you want it)
