Courgette (Zucchini) Gratin

Looking for recipes to use the glut of courgettes/zucchini this year? Look no further, here is a delicious one.

2 lb. courgettes

1 lb. onion

1 large clove garlic

1 cup stock

3/4 cup breadcrumbs

3/4 cup Gruyere cheese or parmesan (can be optional)

1 Tablespoon flour

FRY the courgette and onion in olive oil until just soft. Don’t fry too soft as they will melt.

FRY the garlic with the courgette now

ADD the tablespoon of flour to the courgette mix

POUR in the stock(chicken or vegetable) or white wine or mixture of both

TOP with brown breadcrumbs and grated cheese. I used parmesan

POP into an oven at 400F/200C for 20 minutes

Serve with sprinkled with chopped parsley if liked.  We don’t like much cheese in our dishes so I grated parmesan and it was dry and delicious. Gave a little zip to rather bland veg.
