Brown Sugar Chicken

This is so quick and easy, you can make it when in a hurry and it’s good enough for a quick feed for visitors.

4 boneless chicken breasts (with or without skin)

4 garlic cloves (minced)

4 T heaped, brown sugar

Olive Oil

 herbs and spices, as desired*

Preheat oven to 450F/230C

Line baking dish or baking sheet with foil & brush with oil

Place the chicken breasts on the foil

Mix the sugar and minced garlic with enough olive oil to make a paste.

Add herbs & spices and salt & pepper to taste

Cover the chicken breasts with the mixture, press it on

Bake uncovered for 20 – 30 minutes until the juices run clear, if small chicken breasts.

I have had large chicken breasts with the bone in and wing on that took an hour to cook, so test carefully before serving.

Cooking time will depend on the size of the chicken breasts

As a matter of fact you can use any pieces of chicken you like. Nice on wings.

 

*Suggested herbs, Thyme, Parsley, Basil, Tarragon, Rosemary or indeed any herb you like. But not altogether, simple is best.

Suggested spices, Cayenne Pepper, dry English Mustard, ground Cumin, ground Coriander, Chilli Powder
