Asian Coleslaw with Peanut Butter Dressing

This may sound an unusual dressing but take my word for it, it is delicious. I made this for a group of 10 people and three of them asked for the recipe. The peanut butter is the secret. It somehow turns vegetables into the most popular thing on the table. Everyone, except one young man who doesn’t eat vegetables, absolutely loved it. This is a Cole Slaw with 3 different cabbages. Use the cabbage of your choice by substituting whatever you have.

INGREDIENTS

RICE WINE VINEGAR  6 T

VEGETABLE OIL 6T

PEANUT BUTTER CREAMY 5T

SOY SAUCE 3T

BROWN SUGAR  3T

FRESH GINGER minced 2T

GARLIC minced 1 1/2 T

GREEN CABBAGE thinly sliced 5 CUPS

RED CABBAGE thinly sliced 2 CUPS

CHINESE LEAVES 2 CUPS

RED BELL PEPPERS 2 thinly sliced

CARROTS 2 julienne

SPRING ONIONS 6 chopped

FRESH CORIANDER 1/2 CUP chopped

 

DIRECTIONS

1. In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger and garlic.

2. In a large bowl mix the cabbages, peppers, carrots, onion, & Coriander.

3. Toss with the peanut butter mixture JUST BEFORE SERVING.

Easy peasy!!  This recipe serves 10 people.
